I'd say that they have their pro's and con's
In my own opinion I do enjoy them, but there isn't enough character depth or arch portrayed as there is on the books, throughout you still see Thomas as the clueless kid he was in the beginning and looks for ways to find answers when he is the one that helped develop the maze, and the whole message of seeing how you could change beliefs by looking through a fresh perspective is completely tossed and ignored, also there is no telepathy in the films like in the books
What carries the films is really the ambience that the special effects and the prosthetics are able to create with the city and the maze, that's where I get the ambition from Wes Ball
I am with you my fellow PotA brother, I must say that much like Christopher Nolan, Matt Reeves built an unbreakable trilogy, he has now set the golden standard for us fans and what we expect in a PotA installment.
But what is more concerning on my part, is the fact that Reeve's Trilogy was supposed to serve as a prequel to the original 1968 Planet of the Apes.
My current theory is that by continuing the franchise with a next installment, and based on the success from that one, the many more to come, it would seem that they are going to turn the prequel trilogy into a reboot from the originals, I doubt they'd continue the story from where the movies left off in the original 5, or the 2001 failed reboot, it seems that they are going to go from scratch, which is smart on behalf of the studio, they dropped various Easter eggs throughout the trilogy that strongly hinted that these were just explanations to the events that would kickstart the 1968 film

Or it may be that there is going to be a remake of the old films, and they will be more modernized to better fit in with the cinematic and technologic aspect of the Reeve's trilogy, which I do hope they do so.
Regardless, I am excited, I do hope that Wes Ball does right by the franchise, he seems like an ambitious director just by basing off his maze runner trilogy and we all hope that this next PotA installment comes soon
